**The recipe below contains mostly estimates of what he used. He eyeballed the whole thing and just tried to make it taste good so feel free to add more or less of what you like to this salad.**
1/2 cup cooked quinoa
1/2 to 1 whole avocado
1/2 can of corn
handful of chopped cherry tomatoes
1/2 of a cucumber- chopped into quarters
1 chicken breast- cut into small pieces
2 tablespoons olive oil
2 tablespoons lemon juice
salt and pepper to taste
Cook quinoa- Follow directions on package, but first RINSE YOUR QUINOA. This step is very important. Quinoa naturally has a bitter residue surrounding it so you want to make sure and rinse it thoroughly before cooking.
Prepare chicken- We used pre-cooked chicken strips from Costco because we were starving and didn't feel like waiting for the chicken to thaw. Whatever you choose, use enough chicken to equal one chicken breast.
Combine quinoa, chicken, and veggies. Add dressing on top and mix until uniformly covered.
