Watermelon Ginger Mint Slushie

I'm not sure if it is technically summer yet, or if it is still spring, but today I pretended that summer has arrived!  I had the day off of work so I decided to read out on our porch and try and get some color on this pasty white skin of mine.  It got hot so I decided to go and buy a watermelon just so I could try out this slushie that I have been dying to make all winter!  This slushie is probably one of the best summer drinks I have ever tried.  Seriously.  It is so refreshing and is a nice break from the ever so popular summer choice of lemonade.  


A little hint for when you're picking out your watermelon, look for the sitting spot!  If it is white, then it is not ripe enough yet and was picked off the vine early.  The more yellow it is the more flavorful it will be!  I tried out this technique today when picking my watermelon and it was perfectly sweet.
Watermelon Ginger Mint Slushie
Makes 2 slushies

Ingredients
1/2 of a mini seedless watermelon, rind removed & cubed (about 2 cups cubed watermelon)
1 tablespoon lime juice (I just used the juice of one lime, I love limes!)
1 teaspoon minced fresh ginger
4-5 mint leaves, ripped into small pieces
10 or so ice cubes (more or less depending on how icy you want it and how big your cubes are)


Place all ingredients in a blender and puree until smooth and slushie-like. Taste and add more mint, ginger, or ice if desired.

I am always looking at slushies that call for watermelon but I have never actually tried one. Mint? Ginger? Now you're talking! Yum.
