Salmon Salad

Jordan and I are each from a coast: one from the east and one from the west.  We both grew up not far from the ocean so we absolutely love fresh seafood.  Since we have this mutual love of seafood, specifically fish, we really try and make an extra effort to eat it a couple of times a week.  As long as it is cooked, I will eat it (Jordan loves sushi... I on the other hand can't handle it.  That's one battle I'm not too sure will ever be won).  


One of our favorite go to meals is this salmon salad. It is super fast to prepare, healthy, and leaves you feeling great afterwards.  I know some people feel that fish is hard to cook, but it's not! Just cook it at medium low for 7-10 minutes and it will come out perfect everytime! Enjoy!
Salmon Salad
Ingredients
1 7oz filet of salmon, thawed
1/2 tsp chili pepper
1/2 tsp kosher salt
1/2 tsp onion power
1/2 tsp garlic powder
1/2 tsp ground black pepper
1/2 tsp paprika
Veggies of your choice
Spring mix


Combine spices and sprinkle over both sides of salmon (we buy our salmon filets from Costco! They are great cuts and easy to just whip out of the freezer right before dinner).  Heat vegetable oil in a frying pan on medium low.  Place salmon in pan and cook until you see white half way up the salmon, then flip.  

While your salmon is cooking, prepare your salad.  We like to add tomatoes, fresh parmesan cheese, croutons, and cucumbers to our salad.  Lots of cucumbers!  We top it with our favorite creamy balsamic dressing.  

Feel free to add whatever you would like to your salad, those toppings are just what we prefer.
