Since we have been trying to cut back, I have been asking my friends what recipes they have that don't have meat. My friend Kellie raved about these tacos that she frequently makes. They are completely meatless. Score! Cauliflower and chickpeas are what make up these delicious tacos. Interesting fact, in the healthy world of food, chickpeas are a common substitute for meat because they are so high in protein.

Ingredients
For the Tacos:
2 teaspoons chili powder
1 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 teaspoon sea salt
1 tablespoon fresh lime juice
1 tablespoon olive oil
1 tablespoon water
1 (15 oz.) can of chickpeas, drained and rinsed
1 small head cauliflower, washed and cut into bite-size florets
Corn tortillas
1 cup finely chopped red cabbage
1 jalapeño, sliced, seeds removed
1 large avocado, seed removed and diced
Chopped cilantro
For the Lime Crema:
1 cup plain Greek yogurt or sour cream
1/8 cup fresh lime juice
1/4 cup chopped cilantro
Salt and pepper, to taste
Directions
Preheat oven to 400 degrees. Cut up a small head of cauliflower into bite size florets. Open can of chickpeas and strain. Set aside.
In a medium bowl, whisk together chili powder, cumin, garlic powder, onion powder, sea salt, lime juice, olive oil and water. Add in cauliflower and chickpeas and combine until coated evenly. Grease a baking sheet and pour cauliflower and chickpeas onto it. Put in the oven and roast for 30-35 minutes, until cauliflower is tender and chickpeas are slightly toasted. Remove from oven and set aside.
Make lime crema. Combine greek yogurt OR sour cream, lime juice, cilantro, and salt and pepper to taste.
Heat up your corn tortillas in a skillet. Once slightly heated, top with cauliflower and chickpeas. Top with red cabbage, avocado, and cilantro. Drizzle the lime crema over the top and voila! Enjoy!
